This is GREAT for the HOT summer days we're about to experience!
No cooking - just dig out your blender!
Play around with ingredients...!
(Personally, I'd use zucchini in place of cucumber
and/or add an avocado to make it creamier!)

Gazpacho
From the Moosewood Cookbook
by Mollie Katzen

20-30 minutes to prepare,
2 hours to chill.
Makes 6 servings

4 cups cold tomato juice
1 small, well-minced onion
2 cups freshly diced tomatoes
1 cup minced green pepper
1 tsp. honey
1 clove crushed garlic
1 diced cucumber (or zucchini)
2 scallions, chopped
Juice of 1/2 lemon and 1 lime
2 Tbsp. wine vinegar
1 tsp. tarragon
1 tsp. basil
Dash of ground cumin
¼ cup fresh parsley, chopped
Dash of Tabasco sauce
2 Tbsp. olive oil
Salt and pepper to taste

Combine all ingredients and chill for at least 2 hours.
You can also puree if desired
